Traditional Latvian Rye bread or Rupjmaize is a traditional dark bread made from rye and is the staple of the Latvian diet. The first written references to Latvian rye bread are found in a recipes book dating back to 1901. The bread is made in a wood fuelled hearth furnace from coarse rye flour, with the addition of malt and caraway seeds as ingredients, giving the bread its characteristic flavour and aroma.

concentrate 4.5%, rafined sugar syrup, rye malt 3%, wheat bran, yeast, salt,
improver (wheat flour, bean flour, enzymes (wheat), flour treatment agent
E300), wheat gluten, cumin.
